Buttercream and Holes

Wedding Cake Number Two was for a wonderful couple who were married in November 2017. A beautifully elegant design with hand-piping and a simple sugar flowers.

Or so I thought…

Before I fully realised the wonder and joy that using ganache could bring, I decided to revert back to my old faithful buttercream for the crumb coat on this cake. This is a decision I now regret making!

Baking and filling went to plan, however covering the cakes was a whole fiasco in itself. At least 50 attempts over 3 tiers, and far more fondant wasted and binned than I ever thought possible. All thanks to my good friend (now a firm ENEMY!) BUTTERCREAM.

Finally, the cakes had been covered and stacked and were ready to be dressed with piping details. The cake was finished in the wee hours of the morning (at least 2-3am I think) and I had just enough time to catch a few hours’ sleep before needing to be up and out for delivery.

As this wedding was a Friday, it was left to me to carry out a solo mission on this delivery. The cake weighed a tonne and I was terrified. Although this cake was small in comparison to my first wedding cake, a much smaller size of just 3 tiers, it was just as scary delivering it.

Airth Castle is a stunning venue, and one I would happily visit again, however it is not so friendly for delivering a stacked 3 tier cake.

Cue potholes and a few wobbles while weaving in and out of puddles; the cake safely arrived inside and was unboxed and placed on the awaiting cake stand. With flowers added and secured in place, the personalised cake topper carefully positioned, I stood back, and for a brief moment I looked on in disbelief.


I had done it. I had made and delivered this wedding cake.


For a split second I was immensely proud of myself, and then all too quickly the self-doubt began to creep in. I could see every single flaw and bump and a whole host of things that had gone wrong and shouldn’t have been there.

A few weeks later, I received a really wonderful review from the happy couple, and the worry – I hadn’t realised I was carrying, melted away and slowly, the pride came back.

When I create a wedding cake, or any cake for that matter, a little part of my heart goes with it and leaves me until I know it was well received.
